2. Description of techniques, methods and equipment

The tomatoes are made into different forms for different kinds of products. The main product is 28-30obrix tomato paste obtained from the juice by concentration. Other products are whole, diced or crashed peeled tomatoes, tomato juices such as passata, and dried products such as powder and flakes.


  • tomato puree

It is further processed in industry for soups, sauces, ketchup or tomato juice. For individual use hot filling in tubes of 100 or 200 g and cans are common.

  • peeled tomatoes

After washing and sorting tomatoes are heated by steam and peeled in manual or mechanical way followed by hot filling in cans with addition of tomato concentrate, salt, calciumchloride and/or calciumsulfate. These additives are for a better consistence of the tomatoes. Afterwards the can are sterilized at 95°C and are cooled down. Peeling of tomatoes can also take place in a chemical way or by burning of at 900°C. Furthermore techniques which work with liquid nitrogen are known.

  • tomato pulp

The peeled tomatoes are pressed through a screen or are cutted. Then they are also spicked with tomatoe concentrate for reaching higer concentrate levels. They are filled in paperboard containers, in 200 kg- casks or in cans which are sterilized afterwards at 95°C.

  • powdered tomatoes

Tomatoe purre with 30 or 40% dry mass is dried in spray tower or over rollers. The advantge in quality of sray towers can be balanced by choice of tomatoe sorts and adapted guiding of milling process. Additives such as starch are possible. The product is a powder with about 96% dry mass and is filled into small plastic bags.

Tomatoes are one of the most processed raw materials. Italy is the second largest producer in the world after the US, and the largest exporter of tomato products.
