The tomatoes are made into different forms for different kinds of products. The main product is 28-30obrix tomato paste obtained from the juice by concentration. Other products are whole, diced or crashed peeled tomatoes, tomato juices such as passata, and dried products such as powder and flakes.

Tomatoes are one of the most processed raw materials. Italy is the second largest producer in the world after the US, and the largest exporter of tomato products. Reported figures for water and energy consumption in the different processing steps for canned peeled tomatoes and tomato juice are summarized below:
